ANÁLISE FÍSICO-QUÍMICA E SENSORIAL DE CERVEJAS COMERCIAIS BRASILEIRAS

PHYSICAL-CHEMICAL AND SENSORIAL ANALYSIS OF BRAZILIAN COMERCIAL BEERS
ABSTRACT: The aim of this study was to identify the physic, chemistry and sensorial differences of main brand beers marketed in Brazil and to verify if they were in accordance with the valid brazilian legislation and BJCP’s Style Guidelines. It were evaluated the brands: Antártica, Brahma and Skol, produced by AmBev Bewery; Schin and Glacial, produced by Brazil Kirin Bewery; Itaipava and Crystal, produced by Grupo Petrópolis Bewery; Kaiser and Bavária, produced by Heineken Bewery. The beers were evaluated for alcoholic content, real extract, apparent extract, original extract, pH, total acidity, carbon dioxide content, bitterness, color and turbidity. Sensorial analysis was performed by monadic way using the nine-point structured hedonic scale affective test for the sensory attributes of appearance, aroma, flavor and overall evaluation. A price survey was also performed and correlated with sensorial attributes, applying the main component of multivariate correlation analysis. All brands evaluated in this study showed physico-chemical parameters in agreement with brazilian legislation and with the American Lager style proposed by BJCP. Physical and chemical parameters analyzed were always close to the legal minimum limit. The more expensive beers were not the preferred brands by tasters. Therefore, price should not be related to beer sensorial quality.
